No. 168R E S O L U T I O NWHEREAS, San Antonio taqueria El Pastor Es Mi Señor hasgarnered numerous accolades; andWHEREAS, In 2020, El Pastor Es Mi Señor was established byfamily-owned restaurant group Chilangos Gringos, building upon thesuccess of its three previous concepts, Yellowfish Sushi, fusionsushi eatery Japamex, and sushi delivery business Pinkfish; andWHEREAS, Siblings Brenda and Alex Sarmiento of ChilangosGringos developed El Pastor Es Mi Señor as a tribute to the tacos alpastor of their native Mexico City; the eatery faced a seriouschallenge four days after its opening, when the COVID-19 pandemicclosed dining rooms; nevertheless, the restaurant found itsfollowing; andWHEREAS, El Pastor Es Mi Señor has been widely recognized,including by the San Antonio Express-News and the Netflix programTaco Chronicles, and the taco editor of Texas Monthly proclaimedthe tacos al pastor to be potentially the best in the state; in2025, the Sarmientos were named state semifinalists in the BestChef category of the prestigious James Beard Awards; andWHEREAS, Locally owned businesses make a welcomecontribution to the prosperity and distinct character of theircommunities, and it is a pleasure to recognize El Pastor Es Mi Señorand the reputation for excellence that it has achieved; now,therefore, be itRESOLVED, That the House of Representatives of the 89th TexasLegislature, 2nd Called Session, hereby honor El Pastor Es Mi Señorand extend to Brenda and Alex Sarmiento and their staff sincere bestwishes for continued success; and, be it furtherRESOLVED, That an official copy of this resolution beprepared for the restaurant as an expression of high regard by theTexas House of Representatives.Martinez Fischer______________________________Speaker of the HouseI certify that H.R.
